Looking back

The SD Foodie take

Editorial commentary written from Roger’s original photograph and caption. Roger’s own words are the quoted photo note above.

A chef in a tall white hat carves the duck at a trolley, and the table fills with lacquered skin, sliced meat, thin pancakes in a steamer, cucumber and scallion batons and small dishes of sauce. One plate shows a finished pancake on Xindalu’s own branded china.

Roger calls it one of the best Peking duck spots around and singles out the traditional fire oven. Tableside carving and a full condiment spread are the marks of the dish done the classic way.

Classic, wood-fired Peking duck carved at the table — one of the best around, by Roger’s account.
